joey and the mullet man

it was a hard day for me. maybe it was that i worked a double and i’m a wimp. maybe it was learning that the new guy dropped a pizza going through the kitchen doors and i can’t understand why someone doesn’t tell each new person specifically how to walk through those doors with food. if every new person drops a pizza going through the doors, doesn’t it seem like we should spend 5 minutes with training on going through those doors before they ever go through them with food? maybe it was that rose and joey and peet are leaving. maybe it was my lower back. anyway, i shouldn’t complain, i love my job, i made and cooked some incredible food today, but ‘m beat down tired. i should be in bed already but i wanted to show you peet’s mullet. peet’s mullet is so sweet that i took this picture with the hope of someday making a t-shirt with a drawing of this photo. if it weren’t for the 5000 t-shirts we have in stock right now i’d probably be drawing it already.

we sold 17 deep dish today. and boy were they beautiful. we used to only do 10 a day, then we went to 15, and today we sold the most ever at 17. i made one for my wife and myself and it was one of the best pizzas i ever ate.

joey is finally leaving. joey is unique at satchel’s in that he has a menu back about him AND a satchel’s t-shirt with a drawing of him and his girlfriend kissing on the back. he thinks that because of this he is special and we never wanted to break it to him that no one likes him and the only reason we didn’t fire him is because we knew he would leave on his own and then we won’t have to pay unemployment. he is chasing his girlfriend to some faraway desert and he’ll never have as good a job as we gave him. he may never even have a friend again. but we’ll miss him anyway.

i’ve got a few new pictures to show you but i’ll wait a couple days. i’m too tired to write another word.

hello from the pizza capitol of the world

these shirts now available while they last. this is the first design in a series. other designs, in different colors, will read, go black go white gobama, go red go blue gobama, and go orange go blue gobama, with corresponding colors in the face and shirt. dragonfly is doing a bang up job in the printing end, and now you should stop trying to figure out what it means, and just get one.
the pies were looking good tonight. although once, when i walked through the dining room and stopped at a table to check on the food, the guy at the head of the table told me he thought the pizza was overcooked on the bottom. he showed me the bottom and it looked perfect to me. we do have a tendency to cook our pies dark and crispy. i think it’s the way ot should be but i also know that lots of folks have only eaten lightly cooked pizzas. we are different in that respect.
we got new satchel’s is for pirates t-shirts in and even some of them in ladies style shirts. we got in 2 nice new LSE designs in soft and thinner t’s. the t-shirt department is on fire right now. if you need any new shirts or need a gift for a friend, come check us out at lightnin’ salvage.

yes, i will admit i am for obama. tonight i drew up some awesome obama t-shirts. everyone is going to want one of these, they will look so good even the mccain fans will want one.
i would show you a picture but i’d rather keep it a surprise.
speaking of t-shirts, we have 2 new LSE shirts that should be hitting the shelves this weekend. Also, i ordered more satchel’s is for pirates shirts, even some in girlie t’s, so if you care then check with us in about 10 days. it’s t-shirt mania up there. the get it gainesville shirts sold like crazy. we’ll get more of those soon too and some new eastside g’ville shirts soon.

andy steinberg graced the stage tonight. he plays some very mellow guitar, one of my favorite LSE acts.

this friday don’t miss the most incredible hamhock and slide live at LSE. these guys really can tear it up.

and finally, check out my buddy john patterson’s artwork at the volta coffee shop downtown. i’ve mentioned volta before, definitely a great place to chill and sip a good cup.

this is a great summer. i’m so excited to be heading full into it right now. i love the long hot days and that my kid is out of school. i’m hitting the springs next chance i get and the beach too. i want to enjoy some of those beautiful beaches before they start drilling offshore.

work and stuff

those hot and beautiful ovens… tonight we were busy and everyone came at once, at 7pm. some of those last to order had to wait 50 minutes for food, but then by 8 there were no tickets at all on the rails and i could step out back and catch a bit of the band…
i’ve made some fake bon bons today, out of clay. you see, the bon bons in the dessert case tend to melt and then the chocolate sticks to the paper, but if we keep them refrigerated people would not see to order them. so i made fake ones to put out on display. is that crazy? yes.
they are sitting in front of me now and i am so tempted to eat them. i just hope that i can get the word out to all the employees so a customer does not get one of these by mistake.
there was a girl tonight, she called in a deep dish to reserve it, said she’d be in about 8pm. we sold out of deep dish by 7 and held hers. by 9:30, we figured she wasn’t coming and sold it to someone else. she tried to order it at 9:35. i went out to apologize and told her to tell the host when she gets there to let us know she is there. you know what? she had told the host. since she had arrived at 8:30, she told the host and the host forgot to tell us. she was bummed. mistakes happen, you know? we gave her and her friends some desserts. i was just glad that she wasn’t sitting near the table that got her deep dish, we could have had a fight.
joey’s got about 2 weeks left so he basically just clocks in and does nothing. he just wants the money but doesn’t want to work. tonight he clocked in and surfed the office computer all night. and then he tells me he wants me to write a letter of recommendation… the nerve!
it was a good night. i made a couple mistakes as usual. it’s sad when i make more mistakes than anyone else. really. one guy got the wrong to go salad. two orders had the same name and one guy got the salad with no nuts but he hadn’t asked for no nuts. he must think we’re nuts to forget the nuts.

a busy weekend… especially saturday night. the pizzas were looking perfect. i did forget olives on one, and overcook one to-go pie. sorry. since we got john w. as expeditor of pizzas, i get stuck on repeat when these gorgeous crispy beauties come out of the oven… “this ain’t no bistro baby” and he and some others really want me to make a t-shirt but i won’t do it. it is meant to be funny and smart, but not fit to print t-shirts. those pies just couldn’t get any better. i brought one home saturday night and had it on monday and it was soooo delicious and crispy.

joey is almost gone. our funny guy employee of over 4 years is running off to some mid west state for a girl. figures. he’s got the best job he’ll ever have in his life and he blows it on some dancer. he’ll tell jokes and she’ll dance, oh yeah, they will have a great time!

we’re making more deep dish now. we were at 10 a day and now we do 15 or more a day. they are still selling out on saturdays by 6pm, so we’ll be upping it to 18 or 19. come on in and try one and see what it’s all about.
