… middle of the night… eating a warmed up slice of pizza. i see feta, basil, tomato, pineapple… one tiny piece of ground beef… and checking out a few things on the internets…
like the movie, man on wire, the video above inspires me. you know that guy is married to that bike to make it work like it does. he lives on that bike, he sleeps on that bike, he breathes the bike. that’s the only way you can get that good at something.
i honestly feel that way about pizza. i am a man obsessed. where else can you get your bread, fruit, protein, dairy and vegetable, all in one edible and convenient triangle? but i must say i think it is the bread that is my favorite part.
we had a great thursday night and the lower 13th street “good times” jazz band played LSE and killed it. a person would be hard pressed to figure out who can slay the stage more, the band i just mentioned or woodsboss.
i don’t even remember now if i ever told you about woodsboss and the performance they made a week ago tuesday. i’ve been sort of in a stupor since that show. there’s not many things that impress or affect me as much as that show. but i don’t have time to get into it.
tonight there was something i have never seen before and will likely never see again. a table of about 16 people ordering 4 large pies… well, 3 large and 1 deep dish, and all 4 pies, all 16 people, getting the exact same 4 toppings on their pizzas. i actually had to go out and speak to them about it. they told me that i had told them it was my favorite pizza and they tried it and loved it and now see no other reason to stray from the formula. the trouble with that logic is:
1. i don’t have the slightest memory of giving this combination out as my favotire combination, and
2. i change favorite toppings about as often as most people brush their teeth. tonight i am crazy about green peppers and pineapple, tomorrow it may be steak and bacon.
3. how on earth can 16 people all just eat the same thing?

anyway, i am actually quite impressed that among the group there was no dissenter. let’s get those people on the senate…
and the toppings were, how can i forget: spinach tempeh tomato and feta. i can imagine it is a good combination. i actually meant to cut out a sliver of a slice and taste it but got too busy to remember that.

i am in the wee hours of friday morning and today and tomorrow will most likely be the busiest days of the year for us as we feed all the college graduates and every family member they could gather together for a party. i am as excited as i’ve ever been. i will honestly have a hard time sleeping tonight over my excitement of working the 2 busiest days of the year.
bring it on, college grads, bring it on!

well, truth be told it’s not a bad life i lead either. i think i was having a bad night because of the customer complaint actually. but today i feel better. we had a busy night, the weather is perfect, i’ve decided to always clear my dishes that i bus from now on and never leave another dish for tim b to clear for me.
i’ve decided to start being a good boss….starting now. ha.

i love the students of UF. i love them because they love my pizza. i love them because they wear orange and blue, colors which remind me of my favorite football team. and i love them because they are all so cute. was i ever that cute? seems i was a geek.

friday night was difficult, saturday night was easy. but it was saturday night that brought the complaint of bad service… the table wasn’t told that we don’t split checks for 8 or more, that we add 18% gratuity… it should be on the menu. correct, it should. but we just had new menus printed months ago and the cost to reprint them is high. none of us thought to put that on the menu.
and so we cannot please all the people all the time. and so again we display our humanity. it’s still a bummer to hear about people having a bad time… because of bad service… but i know we sent out some excellent food. the cashier was in a mood tonight too… “why do i bus a table and leave the dishes for someone else to clear? ”
it’s a fair question. i understand that as the leader i should be the best example. the other day i wanted to take some of this dressing to the kitchen and so i scooped it from the walk-in and walked it to the kitchen dripping the whole way… it is a ridiculous way to transport a liquid. i could have had two containers, one to scoop into the other instead of traveling with the scoop… so i briefly wipe up my drips, leaving oily drops smeared here and there… it was a stupid thing to do. i actually meant to come back and mop behind myself because i was so careless…
and the truth is i am in a hurry. too big of a hurry. i have a million other things to do, and so i do not close down the kitchen, i do not clear the dishes i have bussed, i do not wash the dishes i bring back. i have a different job to do. it’s a job that has parts of all the jobs. i do too much and i don’t do enough.

being the boss is the hardest position which seems like the easiest to anyone watching. if you work at satchel’s and you see me run in and run out and then don’t see me again that day, you think my life is easy. if you work at night and you see me a few times a week, and i am leaving dishes for you to clear and separate, you figure i must be lazy. if i am trying to spin 15 plates on 4 wooden dowels using each of my 4 limbs, and considering how to get a dowel and some extra plates spinning from my nose… you might see me and think i a must be a bum for learning such an easy trick. or you might have on trick glasses which only see me on a hammock without any plates at all near me, relaxing and reading a book. i think my favorite quote that helps enlighten the situation was from one of my managers recently… “it’s like a family here… but then at the same time, it’s not…” that’s a tricky sort of quote which releases me of my guilt and puts me smack dab in the middle of guilt at the same time. it is like a family. at work, we all love each other and care for each other and want to be accepted and liked… but it is also a business with bosses and problems and work to do and egos to navigate… i would love nothing more than to be the pizza guy who comes in and makes the pies faster than anyone. but what about the guy who comes in and sees problems to be solved and gets mad and points the finger and loses his cool? that guys job must suck.
i cannot physically come in and make the dough and the pizzas and serve the tables and bus them and ring people up and wash the dishes and clean the bathrooms and work the gift shop and work the back bar and make the salads and tend the garden and lock up at night. so i choose the jobs that i can handle. i have pretty much stopped taking the orders at the table. i have not done that in a long time. i have not made salads in a while nor have i spent a night washing dishes or ringing people up or answering the phones. but i did do all of those things before there were other people needed to do them. i still do some of those jobs and a lot of other jobs not mentioned.
it’s not easy being me

i came across this while surfing. i love this guys website and this song is powerful and got me reading the actual torture memos that have just been released. this guy has other great videos, like one about israel and palestine, one about paul krugman… anyway, he’s on the verge of being hugely famous as he was just on the rachel maddow show and his stuff is good.

i am impressed that obama has released the documents on detainee interrogation. i think it was a hard move but good for us to know what our country and government are doing.

so, i got un-logged in from the blog site somehow and have been unable to access it for a week. after about 20 emails to different people, brent was finally able to figure out the problem. my life is complex now. so complex i decided to delete my facebook page. that was just one more thing than i could handle.
the photo is on zaca lake. the charming spot you saw in the last post. i can still visit the place in my mind. such a calm and peaceful place.
we sent out a 20 large pizza order at 5pm last saturday. it was the first order we sent out 10 minutes late. usually i am 15 minutes early but saturday was so busy in house that the take-out order got a bit behind. no one in the restaurant suffered though, as we powered through the in house orders while cooking the 20 pies simultaneously. we never could have done that back with those 2 ovens but with 3 now it’s a whole new ball game. it’s sorta like a whole new stadium actually. the weekends are busy as always but with someone on oven and 3 ovens, it never seems so overwhelming.
today was monday and one of those days i am supposedly off. but i had to go up there and see that a cooler was repaired and the pepsi machine repaired. it’s been having trouble keeping sodas carbonated during the rush but i think today i finally got a handle on that.
tuesday night. woodsboss, mario and the damn wrights. i’m excited. chances are i’ll be barefoot and dancing by midnight.

Okay people. i am sorry to do this to you, really i am, but i found out that Vimeo is a much better film host site than youtube, for a number of reasons, and have now switched my three new Bad-O-Mime movie links to the Vimeo site. they are a bit different, at least 2 of them are, and they are better. anyway, i heard a story about a woman out west somewhere who saw the original bad-o and loved it and someone sent her a bad-o t-shirt and she was thrilled! can you imagine how incredible it is for that woman to now get not 1 not 2 but three new bad-o movies at once? i am so encouraged that someone out there gets it. because where i work, they don’t get it… well, maybe a couple people get it… but it’s like 5 percent maybe…
anyway. above is a photo of the little lake, Zaca Lake, where i ended up with my family on vacation. it’s in california and boy, does this picture really suck compared to the view that i really had. it would take about 15 pictures stitched together to show just a glimpse of what this place was really like. heaven on earth, heaven on earth.

okay, so i am killing you with the Bad-O stuff i know. Besides this video there are 2 other Bad-O videos below this one on the blog and to see the original Bad-O movie click here. maybe you are like me and you are just too busy to sit and watch all these videos you are not even sure you understand. if you can only watch one, watch Bad-O and Satch-Man make pizza. not that it is the best, but it is the most important in that it instructs the viewer how to make pizza properly. however, you should watch Bad-O-Mime the original and Bad-O-Mime 2. they are really excellent and funny, especially when you think about what a good mime looks like compared to Bad-O. anyway, i can’t make you get it, or laugh, or understand the Bad-O phenomenon, all i can do is put it out there.

i haven’t been so happy about a friday night in a long time. i don’t think we sent out a pizza in house that took more than 35 minutes. we lost a few take-out orders before i realized we could handle plenty of take-out orders in record time. by 8pm we were making 30 minutes calls for take-out and sending 20 minute pies to the dining room. was it magic? was it a dream? how could it have gone so well?
in a way, i am always waiting for the anvil to fall… wondering how can i be so happy and content? something must be about to go wrong.

i have started to mildly follow the news again, i had overdosed on the election, then checked out, and now i am finding myself drawn to more news. seems to me obama is tearing it up. i had a guy come in the other day who said at the register that his paycheck had increased by 20 bucks because of a new obama tax cut and that obama bought his pizza. i am about to get a new roof and found out that there is an obama tax break for getting a metal roof. could we already be seeing the stimulus at work for regular folks?
